Nothing screams East LA to me more than the ubiquitous taquerias and their colorful aguas frescas, Spanish for "fresh waters.” As with traditional Jamaica (pronounced ha-MIKE-uh) agua frescas, this flavor is made by steeping water in crimson-colored, dried hibiscus flowers. We add real fresh mint to this low-calorie, fat-free sorbet that is a staple in our LA gelaterias.
