I enjoy taking classic gelato flavors and adding my own twist to them. In Italy, this flavor combination is usually dairy-based. Our version is water-based, so to achieve a creamy texture we use about three times the strawberries as your typical fruit-based ice cream. Then we swirl-in ribbons of house-made balsamic reduction, for a tart surprise to balance every bite.
